Local Farm to Relaunch Award-Winning Cheese at Mach’s Market

Pawlet, VT—Woodlawn Creamery announced today that it would host a relaunch event for award-winning Pawlet cheese from 10am to 2pm on May 11, 2024 at Mach’s Market in the heart of the small Vermont farming town the cheese is named for.

Originally produced by West Pawlet Creamery Consider Bardwell Farm, Pawlet has won multiple accolades from the American Cheese Society as well as the World Cheese Championship. Now being made by Woodlawn Creamery, run by 7th generation Vermont dairy farmer Seth Leach and his wife Kate, Pawlet is also back in the hands of celebrated cheesemaker Leslie Goff Tyminski. Seth, Kate, and Leslie will be at Mach’s Market in the heart of Pawlet Village from 10am to 2pm sharing samples, selling cheese, and greeting customers. 

“I’ve always wanted to take our farm’s milk and turn it into something really special that people can enjoy,” said Seth. “Now starting with this Pawlet, we get to share our beautiful pasture, the feed we grow here in the Mettawee Valley, the milk our herd produces, and Leslie’s talent—all through a cheese named for this town we’ve farmed in for almost 200 years.” 

Vermont Secretary of Agriculture, Food and Markets Anson Tebbetts applauded Woodlawn Creamery’s launch.  “This is great news for the dairy community in Vermont and those who love cheese. Our farmers and cheesemakers are focused on making the highest quality cheeses in the world. Congratulations to Woodlawn for supporting our working lands and producing delicious cheese for all of us to enjoy.” 

Pawlet is an Italian-style washed rind toma, known and loved for its mild, buttery, grassy, and nutty flavor, and superior melting abilities. Woodlawn Creamery is now making Pawlet; Rupert, a multiple award-winning Alpine-style cheese; and Southwind, a beloved Vermont raclette.
