Pawlet

Woodlawn’s original rockstar—and also our home—Pawlet is a washed rind farmstead cheese; Italian style with a Vermont twist. Creamy, flavorful, and full of brothy, umami deliciousness.

Oxbow

Based on our smooth and creamy Southwind curd, Oxbow is a little beauty, made in 6 lb wheels, aged 60 days and then lightly apple-wood smoked.

Rupert is a glorious Green Mountain Alpine, nutty, sweet, and smooth, with just a hint of fruitiness. Designed to be the star of your cheeseboard.

Southwind

Mild, milky, and designed to melt, Southwind is Woodlawn’s answer to raclette—creamy, rich, supple, and scrumptious. Named for the beautiful 6th generation farm next door in Rupert where this recipe originated.
