Our cheese tells the story of our place, from the curves of the beautiful Mettawee Valley and the mountains all around us to the legacy of farming and craftsmanship that have defined our community for generations.
Pawlet
Woodlawn’s original rockstar—and also our home—Pawlet is a washed rind farmstead cheese; Italian style with a Vermont twist. Creamy, flavorful, and full of brothy, umami deliciousness.

Oxbow
Based on our smooth and creamy Southwind curd, Oxbow is a little beauty, made in 6 lb wheels, aged 60 days and then lightly apple-wood smoked.

Mild, milky, and designed to melt, Southwind is Woodlawn’s answer to raclette—creamy, rich, supple, and scrumptious. Named for the beautiful 6th generation farm next door in Rupert where this recipe originated.
